Grilled Cos Lettuce with a charred flavour topped with crispy pancetta and parmesan shreds. The Honey & Pepper Mustard Dressing adds a bright and pungent flavour to the dish without the help of any extra seasoning
| Ingredients | Serves 2 people (makes 2 pieces) |
| 1 | Cos Lettuce |
| 4-5 | Pancetta Slices |
| 1 | Hard Boiled Egg Yolk |
| 4 -5 tbsp | Godi la Vita - Honey & Pepper Mustard Dressing |
| Handfull | Shaved Parmesan Cheese |
Method
1. Cut Coss
Cut Cos into half, discard outer leaves and wash thoroughly
2. Grill
Place both halves of Cos on a hot grill facing down until charred then turn on the other side
3. Crisp Pancetta
Crisp up pancetta on medium hot pan on both sides, rest on absorbent paper
4. Boil Egg Yolk
Boil egg for 8 minutes to achieve hard egg, then cool and remove yolk
5. Plate Up
→ Drizzle lightly with Godi la Vita Honey & Pepper Mustard Dressing
→ Sprinkle Parmesan Cheese
→ Top with crispy slice pancetta and finish with crumbles of hard yolk
